Grandmother's Buttermilk Cornbread

Well not my grandmother's...but somebody's. I figured I would post every now and again, a recipe that I have found and absolutely loved. I passed it on to family and friends and they love it too. I found the recipe at allrecipes.com. Here it is:

INGREDIENTS
1/2 cup butter
2/3 cup white sugar
2 eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 teaspoon salt

DIRECTIONS
Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.
Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.
Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.

I generally will add or change things to recipes that I've found, but there was no need with this one. Lil Mama and I even have it for dessert with lots of butter.

  1. I will NOT try this recipe.

    Shutting out mental images of melted buter oozing in the center of yummy cornbread - with a dash of cayenne pepper added to the batter. Not seeing the cracks in the top or the crunchy bottom. Not thinking about the rising steam. Mouth NOT watering.

    Where's that scale before I lose my resolve?!
