Well I love beef ribs!! There is nothing better than the taste of a good barbecue sauce on top of them. Ribs happen to be one of lil mama's favorites.<br /><br />I have attempted a few recipes and have found one that I absolutely adore. It is a higher on the sugar content, but it's well worth the splurge every now and again. You can check out "Should Be Illegal Oven BBQ Ribs" <a href="http://www.food.com/recipe/should-be-illegal-oven-bbq-ribs-8701">here</a> . The recipe calls for a 12 ounce bottle of barbecue sauce. When I would make ribs before, I would use one of the cheaper ones like Kraft's BBQ sauce and just doctor it up. I came across <a href="http://www.stubbsbbq.com/">Stubb's BBQ Sauce</a> . It was on sale so I decided to try it out. The taste is wonderful! If you want to splurge, I do recommend it. It's also all natural and gluten free.<br /><br />If you try the ribs, make sure you let me know how they come out. I hope everyone had wonderful Christmas, and brought the New Year in with a bang. I have decided in the New Year to try actively blogging again. So I am going to try and give updates now and again about what's been going on in the past two years. My lil mama is now nine going on thirty. If you had been following my blog you would know that I was considering whether or not to transition to public school. I am happy to say that transition was made last year and she is blossoming. My fashionista loves the fact that she doesn't have to wear uniforms anymore. Clothes, clothes and more clothes.....<br /><br />Remember when it was dolls, dolls and more dolls........Well neither of us are actively collecting anymore. I still enjoy looking at them, but have been focusing my attention elsewhere. Nothing has really tugged at my heartstrings enough lately, for me to purchase one. That of course could still change. Lil mama normally buys me a Byron Lars barbie for Christmas, but I was just not feeling this year's doll. I am certainly enjoying the Michael Kors Gold perfume she gave me instead. So if I find some worth sharing, I will be more than willing to share here. A friend of mine had told me over Thanksgiving that I need to make sure that any nail polish I let lil mama use is free of formaldehyde. I just happen to come across a brand of nail polish called Zoya. Lil Mama and I are hooked because of all the beautiful colors they have. I was able to get several during their flash deals leading up to Christmas. They now are offering a great deal where you get two nail polishes free, and you just pay for shipping. Life has been keeping me very busy, and has been very interesting to say the least. I've learned very recently that sometimes God will give you the same circumstances that you thought you had overcome, to see how well you handle them the next go round. As I've tried to become more spiritually mature, it still isn't as easy to do the right thing, or should I say what is best for me. I still find myself in daily struggles trying to find the peace that I want in my life. I am still trying to fix things that I have no business in fixing. <br /><br />As I look forward to 2010, I am striving to make myself LET GO and LET GOD! If I want peace, I need to learn to look deep inside of myself to find it with God's help. He alone can truly grant me what I need. This past week the pastor quoted one of the scriptures that I really needed to hear:<br /><br /><SUP class=versenum id=bg_passage-23484>28</SUP> Come to Me, all <I>you</I> who labor and are heavy laden, and I will give you rest. I think I can attribute it to reading during Lil Mama's activities. These three books were not my favorite books of all time, but they were entertaining. Out of the bunch, <span style="font-style:italic;">Sin No More</span> was probably my favorite. This book is part of the series with the Curtis Black character. I have always felt Kimberla Lawson Roby was a great author, and I love reading her books. <br /><br /><span style="font-style:italic;">Double Cross</span> by James Patterson was pretty good, but I liked the book <span style="font-style:italic;">Cross</span> better. There are still some thrilling moments though!<br /><br /><span style="font-style:italic;">You Belong To Me</span> was recommended by a friend of mine. It was a quick read with a little bit of romance and mystery. If you read it let me know if you figure out "who done it." LOL!!<br /><br />I am currently reading <span style="font-style:italic;">Because of Grace</span> by Kendra Norman-Bellamy. She is a christian author and I absolutely love her books. I had read the #1 and #3 already in this series, so I am backtracking to #2. I also didn't want to pay high shipping charges if she was sent from overseas. As luck would have it, I was able to find a doll shop in the UK that was selling Nora. The company's name is Nubidollz, and their shipping price wasn't bad. Awana(a Christ-centered youth program), gymnastics and swimming. All three of these activities were to start upon the return from Hawaii. She has been to two Awana meetings and has earned the right to buy her vest and handbook by reciting John 3:16. We missed the first gymnastics class because there was an accident and I didn't pick up Lil Mama until the start time of the class. Gymnastics is 25 minutes away, so she didn't start that until last week. Swimming started this past weekend....or so I thought. When I looked at the schedule of the class, I had it in my mind that this past weekend was the start date. It didn't matter that the dates didn't coincide with that. So we arrived at swimming at the YMCA. Her old camp counselor was at the front desk and I asked her where did we need to go. She said it doesn't start til next weekend. The light bulb goes on, and I let out a groan. A groan not only because I was there on the wrong day, but because I had gone early to pick Lil Mama up from my sister's where she had spent the night. Lil Mama was not ready to leave and she could have actually stayed there longer. At that point her old counselor said to just go into the class, and that the instructor wouldn't mind. Thank God!! Lil Mama was thrilled that she got a ribbon for completing the class, even though she was only there one day.<br /><br />After all of that Lil Mama's day was not done. She had to go home and then get ready to go to a Zeta Phi Beta function with my girlfriend and her daughter. My mother told me that Lil Mama has a better social life than I do. LOL!<br /><br />She may possibly be in four activities for a short time in the spring. Pray for me please!! It has become a favorite of both Lil Mama and I. I'll post below the recipe, what changes I normally make.<br /><br />INGREDIENTS<br />4 skinless, boneless chicken breast halves - cubed <br />1/8 cup margarine <br />1 (.7 ounce) package dry Italian-style salad dressing mix <br />1 (8 ounce) package cream cheese <br />1 (10.75 ounce) can condensed cream of chicken soup <br /><br />DIRECTIONS<br />Put chicken, margarine and dressing mix in slow cooker; mix together and cook on low for 5 to 6 hours. <br />Add cream cheese and soup, mix together and cook on high for another 1/2 hour or until heated through and warm. <br /><br />Here is a <a href="http://allrecipes.com/Recipe/Slow-Cooker-Chicken-Stroganoff/Detail.aspx">link</a> to the recipe.<br /><br />This is an easy recipe to play around with. I typically don't cube my chicken ahead of time. In fact I normally put frozen chicken breasts in the crockpot. If your chicken is already cleaned, then there is no need to thaw it out. The chicken comes out great. Also, I don't wait to put the soup in. I put it in at the beginning. I use 2 cans of soup though. One can cream of chicken and one can cream of mushroom. If you have extra cans of mushrooms, I would throw that in the beginning too. I also like to throw some extra seasoning in there like garlic powder and pepper. If you have some onions, you can throw that in there as well. You may even want to add a dash or two of worcester sauce. You see how easy it is to get carried away with adding ingredients. At the end I not only put in the cream cheese but also a container of sour cream. The end result is soooooooooo worth it. The reason I throw in the extra can of soup because I LOVE the sauce that this makes. In fact each time I make this, I say I am going to make it without the chicken and just have a nice, rich soup.<br /><br />I made this dish last night for our dinner this evening. We are going to have it served over fresh whole wheat pasta. This dish is also great over brown rice(I'll share in another blog how to make some yummy brown rice that isn't instant). If you want to cut calories, you can use reduced fat or reduced sodium soups. You can also use the reduced fat cream cheese and sour cream.
